Menu Plan Monday (The real edition!!)


Okay this is my real edition of menu plan Monday! I plan to actually legitimately plan my meals at the very least for my dinners - this is my first REAL attempt - i posted this earlier this week at least some of it so we'll see if i'm willing to stick to what i put before :)

Dinners:
Sunday - We had baked pasta (Rotini & spaghetti sauce, ricotta and mozzerella cheeses)
Monday - Peanut Butter Stir Fried Chicken , I'll be modifying it and adding brocolli and red peppers. I will also include brown rice with this.
Tuesday - Chicken caesar salad & some sort of canned soup
Wednesday - Black Beans & Rice
Thursday - morningstar farms burritos or nachos
Friday - Veggie Burgers
Saturday - Stuffed Mushrooms

Alternate meals for lunches or in case i decide to forgo my plan above:
left over pasta bake
Red beans & Rice
Extra Soup
Sandwiches
Linguini with home made alfredo sauce
BBQ Pizza

The really awesome thing is that this is just cooking out of my fridge, freezer and stockpile. I could forgo shopping for a very long time if I wanted to because I only cook for myself and my 1 year old picky toddler. FYI i always pick sides while i'm cooking. I am commitment phobic. :)

This is my first post on Menu Plan Monday with orgjunkie.com and hopefully I can keep it up and streamline at least a little piece of my life. :) More meal ideas are located here.

So thus far i've not stuck to even one day :)

Nice to meet a newbie to MPM like me! Hopefully we can both keep it up. Thanks for the tip on using the crockpot...now if only I would get it out and actually use it!! I should definitely add a crockpot meal to my menu soon :)

Hey Greta!! Thanks for the comment :) Yeah sometimes I forget to dig out my crockpot but I'll give you a few recipes for the crockpot - these are a few of my old tried and true's :)
I am not so good at the whole writing recipe thing :)

Pot Roast
Ingredients:
1 cut of beef roast any size or cut (I usually use chuck roast and i usually shoot for 3-5 lbs)
5-6 new potatoes (as opposed to old! ;) )
1 bag of baby carrots (you could also just use half a bag)
1 store brand bag and season
1 packet of lipton onion soup (alternatively you could just cut up some onions and throw em in ;) )

Directions:
wash the veggies and put them on the bottom of the crockpot. place the roast on top of the veggies.

Mix about 3/4 of a cup of water with the seasoning packets and pour it over the roast...if it doesn't look like enough water you can add a little bit more. (Just remember that the roast will release fat and water eventually)

Turn crock pot on low and cook for 8-10 hours or until done. -obviously smaller roasts will be done faster. A word to the wise - the roast will not be sliceable - it will FALL APART and be fork tender.

BBQ Pork Roast/loin
ingredients:
1 pork loin (like the hormel always tender)
1/2 - 3/4 bottle of BBQ sauce (I prefer jack daniels bbq sauce!)
Equal part of water (THIS IS VERY IMPORTANT - TRUST ME!!!!!!!!!)
put all ingredients in crockpot and cook on low for 6-8 hours.

When the pork is done you can either eat it like it is with whatever sides you choose (again it probably wont' be sliceable but you CAN slice it prior to cooking it and the slices shoudl hold together pretty well and be fork tender) Or you can let it cool slightly and use a fork to shred the pork and serve it on a bun (my favorite way to have it!) you could even put that back in the crockpot or just store it in the fridge for sandwiches :) )

Crock Pot chili
1 lb ground beef, turkey or other meat of your choice :) (You could even use an extra 16 oz of beans and have a meatless chili which is what i've gone to!)
1 packet of store brand chili seasoning
1 can beans (your choice on the kind)
1 small can of tomato sauce (based on whatever's on the back of the spice packet)

Brown your meat and drain it then put the meat in your crockpot , add everything. Cook on low as long as you want - at this point everything is cooked - so you could do this and cook it 4 hours and it's fine but the longer it cooks the more tender your meat will be and the better everything will taste. I usually cook it like 8 hours.
