Cheap Meal Idea: Delicious Tuna Burgers, veggies & strawberries

So this week I am able to offer you a whole meal that is super cheap at Publix! (I am not on the ball yet but i'm beside it which is better than under it ;))



Last Night's menu was Tuna Burgers, Strawberries and Roasted red potatoes & green beans in a rosemary butter sauce. Sounds fancy right? Seriously? Please do not believe I was in the kitchen cooking longer than 30 minutes last night. (and that counted fixing my kid's sippy cups of juice & milk)


So here is the recipe - are you ready?


Tuna Burgers:
Ingredients:

2 pouches of tuna (6.4 oz each)
1/2 Cup of shredded cheese (I used monterey jack)
1/2 cup fat free/low fat/light ranch dressing. (I used Marzetti)
1 cup breadcrumbs separated (1/2 cup is going IN the burger and 1/2 cup for dredging)
Oil for cooking (I use olive but ANY works)


Step 1: Mix the 2 pouches of tuna with the cheese, dressing and 1/2 cup of breadcrumbs. Mix it well then form it into fish patties. I used Rachel Ray's trick of flattening it into a huge patty at the bottom of the bowl then using your hand to make a "+" in the mixture then you scoop out each quarter to make a burger! Cool huh?

Step 2: Heat your olive oil in a pan on medium heat. While your oil is heating coat the fish patties in bread crumbs.


Step 3: Place the fish patties into the heated pan.



Step 4: Cook your patties for 3-5 minutes on each side until they are golden brown on each side. Mine needed to cook a little longer for whatever reason. I just cooked till they looked like this:


Now while those burgers are cooking.... grab a bag of Green Giant Steamfresh veggies and cook according to directions. (That's how you get the fancy sounding veggies ;) I wanted some potatoes so i went with roasted red potatoes and green beans in Rosemary Sauce!)

All your food that needs it is cooking so snatch some strawberries out of your fridge, wash them well then cut them into slices (Or just cut the greenery off & serve whole!

When your fish and veggies are done you can sit down to a nice meal that took only moments to prepare :)




The fish patty is shown here not on a bun, but I have had this on a bun before and it is GREAT on a bun!!! I just chose not to have buns tonight because I've had plenty of bread today :)

Hopefully I can break this down in cost for you for publix.

Last week you could have picked up some breadcrumbs for .71 a cannister. I'm hoping you did that :)

$1.19 - 2 pouches Tuna - use 2 of the printable $1/1 coupons listed in matchups below!
67¢ - 1 package of cheese (buy 2 use 1 store coupon & 1 mfg coupon..comes out to $1.33)
71¢ - 1 cannister bread crumbs bought last week.
$1.69 - 1 bottle oil
$1.67- 1 flat strawberries
19¢ - 1 bag green giant veggies using 50¢ coupon
$3.50 - (I'm estimating here - assuming you get some salad dressing around this price)
$2.40 per person (assuming you had to buy the dressing....and didn't have ranch or mayo )
$1.53 per person assuming you already had mayo or dressing at home. I paid 25¢ or something similar for a jar of marzetti salad dressing several weeks ago.
