A few shortcuts......DELICIOUS burritos

Okay so I have just finished eating THE SINGLE MOST yumtastic lunch I have had in a long, long, LONG while.


I discovered a blog recently via I heart saving money/I heart Publix that has THE MOST WONDERFUL recipes. So far I have tried a few of hers. She actually has one child who is allergic to dairy and one who has a wheat allergy so she cooks a LOT of things that are dairy free , gluten free and casein free. If you need recipes that suit that need then please pop over to her blog and see what you can find. Let me share the recipes that I tried from her with you.

First I do want to share a disclaimer!!! I am an EXCEPTIONALLY picky eater.

Unlike most people who will just pick around this stuff or just accept it and move on - I stop eating if I determine my food is gross.

I tried her recipe for her homemade chicken nuggets on Friday night and I have to tell you - There was nothing gross about these!!! These were super easy and I even made adjustments to her recipe. I tried them to see if it would be worth it to me to make an actual batch of chicken nuggets for my daughter. (She doesnt' eat like most kids as far as eating chicken nuggets habitually.) I will be buying some chicken on sale and making these for my daughter.

Now - I didn't leave them alone completely - I seasoned my breadcrumb mixture with chili powder and garlic powder and salt and pepper. My daughter ate about six of them that night and then last night I heated them up in the microwave and she ate about 8 of them!!

I can trim my chicken SUPER trim and get rid of all the tendons and gross parts. :)

I like that I can control the size of these and the seasoning. I can make them organic if I want to and at a fraction of the cost of store-bought organic chicken nuggets!

I just made these burritos and holy smokes! it is a complete success. As I mentioned before I am NOT a person who digs on ground beef so the shredded beef in these make them absolutely amazing.

Of course - again with the changing the recipe!!

My modifications:
I used 2 lbs of sirloin tip roast - I did not use bone in
about 1 cup of onion chopped
Then I used 2 packets of seasoning and only 1 can of refried beans.

This whets my appetite for a whole new kind of chili. I thought I was going to have to just make vegetarian chili (which is delicious - don't get me wrong!!!) but this is a great way to get my protein in as well.

I especially LOVE her recipe for blue slime. My daughter isn't allowed to have soda or sugared drinks so it's hard for me to not make this for her but I think she'll live without trying it for a few years :)
